1: Begin the Lemon Chamomile mocktail by sourcing a jug suitable for a hot infusion. Place within it the chamomile tea bags and pour the boiling water. Allow the chamomile brew to steep until it possesses a robust character. Once it has cooled to room temperature, transfer the tea to the refrigerator without delay, giving it time to chill.
2: Meanwhile, turn your attention to the delicate harmonies of flavour. With gentle hands, carefully muddle the lemon wedges with the honey and a pinch of thyme.
3: To the muddled concoction subsequently introduce the non-alcoholic Seedlip Garden 108 Gin, a spirit of English garden elegance. Combine this essence with a measure of ice, stirring, allowing the elements to intertwine in a delicate dance.
4: Prepare your chilled glasses by filling them with ice, a perfect touch for those warm summer gatherings.
5: Divide the strained liquid into each glass, followed by the chilled chamomile tea, undeniably infusing the mocktail with a sense of citrusy freshness and floral chamomile tones.
6: To elevate the flavours, then add a gentle stream of tonic water cascades into each glass, adding a touch of effervescence and charm.
7: Lastly, garnish each glass with a slice of lemon and a sprig of thyme, to complement the flavours within.

Furthermore you can make this as a standard cocktail by replacing the non-alcoholic gin with the following: a gin and tonic or a vodka and soda of your choice.
